Last night I had some of the most delicious food I've ever eaten. Everything was thoughtfully assembled, flavors were blarring, and my taste buds were singing. I absolutely loved every single thing I ate. Being able to watch our food being prepared was such a cool experience, and the customer service was phenomenal. We got to speak to the chefs about how all of the meat is butchered in house, how they source food locally and have relationships with the farmers, and how passionate they are to work there. Hosea Rosenberg's restaurant was unforgettable and left me wanting to try more. Check it out if you're in Boulder. You will not be disappointed! *My fave was the Spanish octopus and crispy pig ears, mmm!!

Delightful Valentine's day chef's special - everything was delicious and perfectly cooked. Really liked the wine pairing as well! I did miss blackbelly's signature steaks and cured meats with this lineup but will have to come back for those on a normal night!

Absolutely phenomenal! My first time coming to this location and it was a fairly busy night as the college was hosting graduations earlier that day. When I walked in I was immediately greeted, the Hostest was very politely informed me they were full and once a space open at the bar I was welcome to take a seat as there weren't anyone else waiting for just a single seat. I got a text message approximately 10m later saying my table was ready. Apparently a seat has opened up at the chefs table! I took my seat and it was less than a minute before my server approached me and introduced himself. He was very polite and knowledgeable about the menu, which I very much appreciated because I know I had more than a few questions. After some deliberation o decided upon the pigs ears as my appetizer, along with a small charcuterie board consisting of 4 items I chose and several portions of things that pair well with the meats and cheeses ordered (the charcuterie boards are build your own, each item added to the board is $7). As an entre I chose the 8oz sirloin prepared blue, with mixed mushrooms as a side, pair with a glass of red wine I believe was called Alexander's Valley. I will say it did take a bit of time for the appetizers to come out but it was understandable given all the graduates eating there that night. It was enjoyment enough just being able to watch the Chef and other cooks prepare these amazing dishes. One of the chefs in the back of house noticed I had been waiting a while and prepared a small treat for me while I was waiting. I honestly can't remember what they said it was but it was some kind of whipped cheese on top of a thin slice of radish. Before going on to the actual meal I would like to make note that their house bread and butter is absolutely amazing. The pig ears are marinated over night and then deep fried and laid over top of some bacon jam, then a sunny side up egg is placed on top. I had honestly never had pig ears before and I loved them. It didn't have a prominent "pork" flavor to them. The chefs here definitely know what they are doing! The outer skin was fried perfectly to a crisp, and the fat was rendered wonderfully. They had great flavor and texture on their own and the bacon jam was just an added bonus. The charcuterie board consisted on some prosciutto, cows head meat, Bleu cheese, and a goat cheese, in addition it also has apple chutney, honeycomb, pickled mustard seeds, olives, and apple slices. Everything was amazing and I won't go into too much detail here. The steak and mushrooms were both cooked perfectly. The steak is topped with a glaze and served with a small side Aurgula? and onions. For dessert I decided to have the carrot cake. Apparently the recipe belonged to an old friend of the owner. The icing wasn't overly sweet and it had a nice creamy texture to it. The cake was dense and moist. It was served on a plate drizzled with caramel and honey roasted oats, with a side of orange sorbet. All in all it was an amazing experience and I definitely recommend giving rhis place a try. It is expensive but the service is great and you won't regret it!

Awesome spot with even better food. Their cocktails are also very sophisticated. Got the blackbelly burger and it was fantastic. Nice sized portion with lots of flavor to leave you satisfied. Definitely worth a visit, make sure to reserve ahead of time.

What a fantastic dining experience! The servers were incredibly friendly and knowledgeable about the menu. I can't say enough good things about the food. Everything from my cocktail to my appetizer (marinated olives) to the bread (in-house foccacia) to my entree (roasted chicken) to the desserts my partner and I shared was incredible. The ingredients were clearly high quality and everything was prepared so well and presented beautifully. We ate here two weeks ago and I'm still thinking about it. Well worth the price too. Will definitely return the next time we visit Boulder!

4.5 Services was great. Our favorite plate was the McDonald family farm pork 👌absolutely amazing. I didn’t give them 5 stars because a Lamb plate for $48.00 with just one small chop of lamb in my opinion is too expensive.

Food and service was amazing. Definitely go for the pig ears, they were our favorite. Can’t wait to come back and try more! The bread was also outstanding but make sure not the fill up before the food comes out
