Before I bought the book, I went to the bakery itself and tasted some of the bread. For once the breads were properly salted and had enough flavor. I've been baking bread for over 40 years, beginning at a macrobiotic bakery in New York in the early 70s.

Real people and real bread. The most close to earth in all New York. Que el abuelo San Pedro siempre me los cuide

quaint, local bakery. The turkey breakfast croissant was perfectly assembled. And this is not salty processed deli turkey. Nice thick slices of tender turkey breasts with micro greens. Delicious. Drip coffe is also good. Small space so expect shared seating at tables.

Bakery. Not soggy but crispy. Not stale but fresh. Not bland but super tasty. Baguette of the highest order and Danishes that the Vikings themselves would traverse the Atlantic to conquer. 5 ☆

Got the Bien Cuit bread book for Christmas and made the Maple Rye - one of the best flavored breads and a great crumb. Today it's the Buckwheat Sourdough. Thank you, very well written bread book.

Was in Brooklyn a couple months back and stopped here for lunch. Absolutely fantastic, the best bakeries in Philadelphia don't compare.

You haven't tasted bread until you tasted this! As soon as I take a bite, I'm transported back to my Italian village! If you've tasted bread made in Europe, then you'll know what I mean! It's amazing!

Though I wish they had vegan option. The butternut squash was really good and the arugula sandwich. And it always smells good when you walk pass this place

I recently had the pleasure of stopping in Bien Cuit. I was rewarded with one of the best-tasting sourdough baguettes I have ever experienced. It's a culinary masterpiece that captivated my senses and left me craving for more. What truly sets this sourdough baguette apart from the rest is its exceptional depth of flavor. The bread exhibited a remarkable complexity that can only be achieved through a carefully nurtured and matured sourdough starter. The distinct lactic and acetic acid notes were present, providing a delightful tang that lingered on the palate without overwhelming it. It's evident that this baguette was made with great attention to detail and a true understanding of the art of bread-making.

The first business that’s made me wish there were 6 stars. I could eat the croissant sandwich with a soda from their curated selection for lunch every single day. The baked bread is of course divine. Normally I knock businesses for not having seating. Doesn’t even matter. This place is that good. To be fair to other reviews I’ve seen, they are not winners for customer service.

Recently, I discovered ‘Bien Cuit’ while picking up supplies at the Asian store next door. It’s a bit pricey, but once you taste their bread, you understand why – though it really depends on your appreciation for the unique texture of slow ferment bread. What impresses me most about ‘Bien Cuit’ is their commitment to their craft, despite the modern trend towards shortcuts and quick fixes. We need more bakeries like this.

Had the chocolate almond croissant and the white bean and pickled onion tartine. The tartine fell a little short because I only had some onion in the middle, but the issue is that the onion is what accentuates the flavor of the bean. Would recommend them having the onion spread evenly across the bread. Now the chocolate almond croissant. I'm not an avid chocolate fan, and I don't really eat too many croissants, but the moment I had it, my mind went blank and gave me flashbacks of a better time. 10/10 would buy again.

My favorite croissant in the neighborhood! Great flavor and not overly heavy, even better heated up. My only complaint is the sandwich loaf isn’t consistent. Twice we’ve purchased a whole one to find the inside underbaked despite the outside being bien cuit. Not worth the high price.

When I heard about Bien Cuit I said to myself I have to go. It's super cute place with tables that you can sit and enjoy your coffee and croissant. The products are delicious, well backed and crispy! I took a traditional croissant with butter and jam and daniish with asparagus and cheese, delicious!!

Slightly expensive. Ambience is nice. Smells great inside. Warm on a cold winter day. Not very spacious or perhaps it may have been full of people. Good luck finding parking on a saturday afternoon. Overall it was a nice spot but hard to get to and hardly no seating.

Pretty solid french bakery in Cobble Hill. Croissants are a bit more bread'y than flaky/airy but still quite tasty. Staff have always been nice and coffee drinks are good.
