Honestly, I'm usually pretty good about taking photos of the dish I order, but this time was different. My eyes made contact with the enchiladas and queso fundido, and I just lost it. I devoured both delicious dishes (with my partner) before I could remember to take a photo. What I'm getting at is this place has FANTASTIC food, and looks absolutely beautiful. Highly highly recommend stopping by here for a drink and bite to eat!

Fantastic food. Started with the chips and salsa. The 3 salsas were varied in heat levels, all good. Home made tortillas, delicious. Perfect rice and beans. We all had a variety of tacos. Everyone was pleased.

We came to Cedar Rapids after visiting Austin, Texas, earlier this month, and the Mexican food we got here at Caucho was far superior to what we had at a premiere Austin Mexican food eatery!!! 🤣 Everything was absolutely perfect — from the salsas to the fresh in-house tortillas to the mole sauce (always the best test of a Mexican restaurant). And the service was friendly and efficient!

On my first visit, I was super impressed. From the hostess, to the waitress, the food and the drinks. It was all above and beyond the level of service I have come to expect on Cedar Rapids. Big city service in the midwest!!!

Well what do you know? Cedar Rapids has a fine dining experience worth looking forward to. I tried Caucho a couple years ago, it was fine but lackluster. Not bad just not anything worth going back for.
Something has happened though and they are on their game now. Five of us at dinner tonight, fairly busy but not overly so. We were seated right next to the kitchen, which was great, I like seeing what's going on.
We weren't there for more than 10 minutes before I noticed that the staff were smiling and seemed to be enjoying their work.....a good sign.
Our waitress was attentive, friendly and pleasant AND genuine. We ordered some drinks (house made not mix-made margaritas) and appetizers.
Chicharrones: These were light and tasty. I would have preferred a shade of seasoning other than salt but they were well made. I wasn't impressed by the guajillo sauce but it was fine.
Chips (housemade) with verde asado and rojo salsas. Salsas were excellent with the Rojo beating out the asado by a bit.
Pozole stew: I'd go back for this alone. The broth was rich and light at the same time, meat was tender. I thought the hominy was a shade tough but not problematic. Fantastic.
Entrees
Chilaquiles: this was very good. Had I not also tasted a few other items I might have been more impressed. Very good flavors, nice presentation.
Carne tacos: the best taco I've ever eaten. Period. Niman Ranch beef. The other reason to go back, if there were no other.
Dessert
Churros and Chocolate: well it's not an amusement park churro, light and airy but custardy with a killer sauce.
The other standout? They make their own masa from dry corn to make the tortillas.
Keep up the good work. Best place in CR and probably IC.

Interesting place if you're visiting the area. The sister restaurant in town was better, but this is definitely an upscale unique Mexican place that was surprising for IA!
Get the horchata- it's not quite traditional but still great.

First time we had been there and we loved it! We ordered chips and salsa and were able to pick out three fresh made salsas with our order. The chipotle had a great Smokey flavor and the pineapple was a great mix of sweet and tangy. Our tacos were fabulous! So much flavor and so much food! We also ordered what was like a fresh, tangy cole slaw and it was great! Our server was attentive and our food delivery was very well timed; barely felt like we waited between ordering and getting chips and salsa, finishing those, and getting entree.

Shout out to our server, Ms. Savannah! She was clearly busy but still made it to our table to check up on us and answer our million questions. I was very disappointed to say the least. Atmosphere was decent, our waitress was sweet. My biggest complaint is how the place was run. Granted, it was Cinco de Mayo but I made reservations at 1, for 7:30 that night (plenty of notice) but still had to wait forever for our table. They comped us chips/salsa/guac for the wait but then charged us gratuity on it at the end. Guac was good, rest of it wasn't. I would never pay that kind of money for chips & salsa & get so little. Took forever to get drinks. (margs were the saving grace of the night) but each round took a real long time. 7 out of 9 people were unhappy with the food. It just wasnt good & portions very small for the price. When checks came, we were forced to pay for half of the food that was sent back and none eaten. The 2nd waitress even argued with us about it. Just an overall, disappointing, bad experience. None of us would go back.

Came here for a date night dinner, we ordered the queso fundido and it’s basically 5 melted cheese curds with a sprinkle of peppers and chorizo, for a almost 9 dollar appetizer we were very disappointed. Both of our entrees were very bland and flavorless. We spent 60 dollars and left still hungry and wishing we had gone somewhere else. The waitress was friendly and my drink was good, that’s why I’m giving 2 stars instead of 1.

Every time we go to Caucho we expect to wait because it is always busy. I guess that's a good problem to have... They always seat us pretty fast. Food is so good I'd probably wait an hour! I am vegan but I don't ask for special service or have to make a big deal about it because they have a great menu for different food allergies, etc. You want to call it a hipster taco? Go ahead... It is amazing! I'll have another! The wait staff, hostess, food runners are always kind and explain things to me with a smile when I don't know what something is. I have been here several times and have waited to review because our first time was different. Different is what this eatery is. That isn't a bad thing. Enjoy it, Cedar Rapids. It isn't your average eatery. It truly is a cut above. Also, the food is always fresh and our drinks were outstanding. As a collective, it is nice to see a group of people working so well together to take care of their customers. Tired of steak and potatoes? Get out of your box and go here. Tell them it is your first time and they will be so kind and accommodating. Enjoy!

I have loved Mexican food in California, Texas, New Mexico, Arizona, and Mexico. Caucho adds fresh ingredients and great chefs to create a really wonderful Mexican restaurant experience. Love the food. Love the drinks. Love the staff. A real "don't miss" restaurant.

It was great place of drinks but they hardly gave you any chips to go with the salsa had to ordered 3 time and only got 3 large chips and had to pay extra and no one in the group liked food would only go back for drinks
