The food is exceptional, filet was cooked perfectly and the lamp chops are to die for! Scallops and Sea Bass were all cooked to perfection and flavored nicely. The chocolate cake for dessert was HUGE and the Creme Brulee was nicely garnished with a pear slice, both were delicious! What truly makes this restaurant exceptional however is the staff. The GM is genuine and friendly, our waiter was knowledgeable and efficient. I don't know the name of the African-American gentleman who seems to be in charge of the dining room, but man that guy knows his stuff! He's always got a smile on his face, is extremely personable and by far one of the nicest people I encountered during my stay at the Hyatt. 5 star food, great service, just a few of the many reasons we will return!!!
The service was excellent! I love a restaurant that keeps your water glass full! The sushi was the best I’ve ever had! Very delicious! I had the seafood grill which includes sea bass, lobster, oysters, shrimp, and crab legs. Everything tasted great! My husband and I had a great valentine’s dinner. We are looking forward to going back just for sushi and drinks.
The customer service was excellent! They staff attended to all of your needs without question and was very speedy! The food was beyond great! The sushi was very up to par and the steaks are very tender and it literally melts in your mouth. The bathrooms are very clean as well as the dining area. I would say that this place is spectacular for dinner and drinks and just because.
I have ate here a couple of times and it is always on point. The sushi is some of the best in the city and the steaks are even better. I'd the place can make me want to eat cream of corn all day long then they clearly are doing something right. Their other meat and seafood options don't miss a beat either.

We had the most wonderful anniversary at Stetsons complete with champagne and chocolate cake. Pete, the general manager, was nothing but wonderful and welcoming! Highly recommend!!
The food was really good, but I was completely blown away by the waiter we had. I asked for him to take one picture of my boyfriend and I by the fire place. Not only did he take several, but took us to other areas to take some more pictures. We got some beautiful shots that I will always cherish.

Better than David Burke's (though scallops were tasteless), shashimi maguro& ebi fantastic. Steaks, lobster, seafoid grill, and all sides terrific. Wait staff very attentive. Big thanks to (?) Ursa? And lady serving in smaller bar/diningroom.
Exceptional food and outstanding service. Sushi was excellent and my 8 oz. filet was perfect. Don't pass up having the creamed corn as a side dish.
Excellent food and the service was impeccable! We especially loved the cheddar cheese bread and how our water was filled even after a few sips! Great place to spend Valentines Day. We enjoyed it a lot!

Though I no longer live in Chicago and missed the opportunity to dine at Stetson during my last visit in 2013, I will always remember my days of dining at Stetson with one of the best wait staff in the world, the one and only, Anthony Richardson. He is and has always been a wonderful friend of mine. Whenever friends ask me where to dine when they are in Chicago, I always have two recommendations, One-Stetsons at the Hyatt on Wacker and Two-Always ask for Anthony Richardson to enjoy their dining experience even more!!!!
The atmosphere is fantastic. The service was right on par with any other five star restaurant I’ve eaten in and when I asked if they had lobster mac & cheese, I went back and spoke to the shop. Another chef did not have lobster mac & cheese, and it is not a regular menu item. They came back with a suggestion and said we can make a shrimp mac & cheese, you cannot ask for much better service than this when they will make what you desire even if it’s not on the menu highly recommend this restaurant.
Unbelievable food, great service, wonderful atmosphere. 5 stars across the board. Perfectly cooked steaks, best BBQ eel I've ever had. Absolutely would dine here again, without hesitation.
This is absolutely a must try restaurant if you’re in Chicago. Everything was amazing, the sushi was by far the best I’ve had ever, my wife had the steak and again absolutely loved it. I can’t say enough good about Stetsons , we will definitely be back. Thanks for the great experience. John
Great experience! Pete Karczewski, General Manager engages well with customers. The food was delightful! Much appreciation to Pete for convincing me and my husband to try the Apple Pie à la Mode. It is not a slice but a mini pie. Absolutely delicious and disappeared before I could take a picture!

Deb is amazing! She made our experience at the bar so friendly and enjoyable. She knew we were hosting clients and had everything we needed with a smile! This is a great place for hosting, where you are able to talk, eat, and drink in a nice but approachable environment.
The grouper was fantastic salmon was fantastic. But Deborah was a outstanding waitress that took my order. After reading some of the reviews, I was nervous to try this place. But, let me tell you ---- everything was WONDERFUL. The staff is amazing, attentive, and friendly. They offered recommendations when I asked and knew the menu backwards and forward. The sushi was fresh and delicious. I can honestly say that I've never had a better dragon roll. The person I was with had the salmon and it was perfect. Cooked thoroughly but not dry, plus it was very flavorful. We had saki (the cucumber and the snow) and they were both excellent. I heard people at the next table raving about their steak. Seriously, this place is a gem. I loved it. I would give them 10 stars if I could.
The place is high end. Went with my gf and the pulled her chair out and everything. The place is pinkies up for sure, but the sushi was delicious and the steak was fire! Pricey but worth it.
One of the best places I've ever eaten sushi, it's fresh and has the perfect temperate. The taste and consistency of the meat is also very good. Totally awesome.
The asperagus was awesome, great cheese on it. Also had spicy tuna roll (pictured) which was good. I was hoping for a little more flare, but it was very good flavor, not a hint of fishy taste.
Simply fantastic. This is the sort of experience I look for and so rarely find.
Food-wise, the steaks were generous and perfectly cooked to order; the wagyu bowl was a bit rice-heavy (but such delicious rice!) and the beef was plentiful and perfectly done. The drinks were as expected, with the lychee gin being the star. I had the salmon roe as an appetizer, and it was amazing! I love ikura, and this was among the best I've ever had.
About the only complaint of the entire meal was that the knives weren't as sharp as I'd have liked, but the steak was tender enough I almost didn't notice. (It would be nice if the knives were a bit sharper though)
Seriously, Stetsons exceeded my expectations. This is far more than a "hotel restaurant", despite being in the lobby of a Hyatt. Treat yourself: you won't go hungry, except maybe the next day as you're unlikely to have leftovers!
Such a delightful experience. The staff treated my husband and I like we were family and the food was absolutely delicious. What a great place!
