Cumin. I think it is cumin that makes Mark's brisket rub so flavorful. Unconventional setting in a shopping mall, but solid BBQ. I enjoyed his simple cucumber and onion salad too - classic midwest. When I ate there, a retired lady told me she eats at Marks nearly every day... I understand why.
