We love Vital Root. Great food, amazing flavors and healthy. We love the Devils on Unicorns, the califlower "chicken wings", pad Thai, bahn mi tacos and the mixed drinks are to die for (even a little dangerous- delicious as strong). Don't skip dessert either. Tiramisu and avocado mouse are both delicious. Great baked goods too and lovely open an inviting atmosphere. Free wifi to boot.

I have a healthy obsession with the devil on unicorns small plate. Who knew you could make dates and goat cheese better when replacing bacon with coconut strips? The mushroom "risotto", using sunflower seeds instead of rice is amazingly delicious. Love this place!

THIS is the kind of restaurant I live for! The food is so delicious, you forget what you are eating is actually extremely healthy! The combinations of ingredients are ingenious, enhancing even the most subtle of flavors. This is the one restaurant where I can eat more than one item on the menu and leave feeling fully satisfied. Finally - a restaurant that actually recognizes and caters to a vegan paleo diet and celiac intolerance! And the staff makes your dining experience even better. Positive energy, incredible food - a five star restaurant for sure!

As a shop owner on Tennyson that happens to be a vegetarian,I have been waiting for Vital Root to open for a while! They do not disappoint , everything that I have tried is delicious!

When you are looking for healthy, organic food (with vegan options) be sure to go to Vital Root. The atmosphere is warm and comfortable and the food is outstanding!! They even offer organic pressed juice. We will be back. I just wish we had a Vital Root in Castle Rock!

Came across this place back in June when I came into town. It's right up my alley with various vegetarian/vegan options and it's gluten free! The eclectic dishes fit my dietary needs perfectly so I came back here the other day when in town again. I'll definitely come here each time I'm in town

Vital Root is one of my favorite restaurants in Denver. The beet loaf is my favorite! I could eat it everyday. The almond pancakes are also amazing. My children love the sweet potato fries. We have gluten, egg and dairy allergies and we can eat everything on the menu.

A lot of places that say things can be made vegan just mean they'll remove 40% of the ingredients and still charge the same amount for it. I was pleasantly surprised to find this isn't the case at Vital Root. The items we ordered, while not cheap, were absolutely delicious, fresh, and surprisingly filling for what looked like a small portion. I can't afford to eat here regularly, but this will definitely be a place I'll splurge on on special occasions.

Fabulous food! Unique vegetarian and vegan food, multiple alcoholic beverages, wonderful decor. The take out Thanksgiving dinner is as good as it gets.

This is my new favorite restaurant in Denver, and I could eat here every day, but I try to limit it to just once a week. The food is unique and fresh, and whenever I eat there, I feel like a million bucks for the rest of the day. I started going because it's delicious, but I keep going because of how good the food makes me feel.

This place is a fully gluten-free, vegan, non dairy kitchen, so I can eat anything here. Wahoo! Score! I have several things from the menu egg sandwich and tacos. They were all good. I also looked at the decor of the restaurant with garden area with grass inside the tables. The wood carved tables and many others art work. The staff were very friendly and helpful. I would totally go back to this business. Go try it out for yourself. They also have outdoor seating and bowls for your dog.

Loved this place. Good food selection, all healthy options, super cool space. Good portion size. Brussel sprouts were amazing. Kimchi had great flavor also and the rueben was smoky and tasty.

Wonderful vegetarian restaurant! I’d be honest I had suspicions about this place and it wasn’t my first choice on Tennyson but boy was I completely blown away by the quality of the food!!! Every dish was carefully prepared with so much flavor. You definitely get what you pay for here. The food was phenomenal and the restaurant was beautifully decorated. Totally a vibe. Truly impressed with this place. 10/10 experience. We got the reuben, pad thai, Korean stir fry, bánh mi tacos and the Korean wings. Drinks were also fun and refreshing. Looking forward to checking out their Happy Hour specials.

I took my girlfriend here for some late lunch and the place was very chill and relaxing, the line to order was moving really fast so it didn't take us long at all to get the food on the table. The breakfast falafel was huge and delicious, it was easily 2 portions worth of food so definitely a steal for about $16. The stir fry was a blast, so many different grains and sprouts that I can't mention them all, but the favorite ingredient were the mushrooms, beautiful texture, very flavorful, we loved them. Last but not least the cashew cheese nachos, you can't even tell is vegan, the texture held up for the entire 90 minutes we were there, even after it got cold (naturally) the cheese was delicious. I have to give a big shoutout to their manager Ethan and the chef Grady for the hospitality, it feels so good to eat at a place that welcomes you like if you were home, very polite, very professional, my partner can't wait to go back for another round of nachos. Keep up the good work!

My second time here with a group of 4. Everything on the menu seemed great especially the salads, burgers and fries. Recommend falafel wrap, tacos.The pre made crunchy chick peas weren't our favorite. The place has good vibe + wifi.

Stopped in for a quick lunch to go. The root vegetable pastrami had a weird taste and the cheese, I assumed was plant based since everything else was, was listed as Swiss. I was unable to eat it after checking the online menu. It was a beautiful spot though and I would definitely go back to try something else, after reading the menu more throughly.

Love this place! They get really creative with healthy ingredients and the menu is packed with variety. I was really impressed with the level of freshness their ingredients have. I was in a party of 5 and got to experience the falafel wrap, Cobb salad, chicken and waffle, Reuben sandwich and the Korean stir fry. If you’re looking for a healthy option that doesn’t sacrifice taste, I promise you won’t be disappointed with this place.

This is one of my favourite vegan restaurants in the area. I recommend their yucca fries and cashew ‘queso’. I also love the coconut margarita. They offer a unique food & drink menu. There are a lot of seating options both indoors and outdoors. The back patio is mostly closed in with heaters so it stays shaded in summer and warm in the winter, and the front patio is nice for people-watching. This restaurant’s location is wonderful because it is directly next to other businesses including a cat cafe, ice cream shop, other restaurants & bars, and local shops.

Staff very friendly, 100% gluten free restaurant, ambience really lovely, fast delivery of food. Two dishes we got here were amazing. The falafel and the waffle dish. The sunflower risotto was not edible though, for me. I had asked the staff what was a popular one and she listed that one but I couldn’t eat it. Everything is gluten free so I assumed there would be gluten free risotto with some sunflower seeds but it was just a mash of sunflower seeds. Other than that, highly recommend.

Vital Root (and the Edible Beats family of restaurants) is so unique and expert at creating incredibly tasty dishes and specialty sauces. I am vegetarian, and as we all know it’s hard to find quality choices at other restaurants. My favs here are the Vital Cobb salad (filling enough for 2meals), Korean BBQ “wings”, beets, risotto among others. These chefs are expert at creating unique flavors & textures that are perfectly balanced for each dish. Even drinks are well thought out flavors and unique. A must go for anyone who wants healthy tasty food.
