I am from out of state and spent many a day walking past the Waffle Lab truck in Old Town when I would visit Fort Collins. It seemed that whenever I was visiting, the truck was not open. Finally, last July, I was able to visit when the truck was at the farmers market in Loveland and the new storefront was opening. I had two chances to have waffles and they were all I had hoped they would be. The waffle has a nice crisp, slightly sugary taste and is the perfect taste explosion with the toppings to choose from. I had the health nut waffle one morning and the grilled cheese waffle another day at lunch. The grilled cheese is my favorite. It is the best grilled cheese "sandwich" I ever had. I recently made a return visit to Fort Collins and once again visited the shop. The wait staff and owner are very friendly and, once again, the waffles were wonderful. I wish the staff of this restaurant the best of luck and also hope you know it out of the park at the Food Truck competitions.
Came in on the first day of them being open in their new building, and I have to say that they knocked it out of the park! The decor of wood and Edison bulbs was pleasing to the eyes, and the chicken and waffle's chicken, from red hen, is to die for! Check this place out!!

We loved it! Nice space, great vibe and just the right amount of busy for great service for a Sunday brunch!! All the employees were attentive and friendly. And... the food was delicious! Crispy waffles and delightful toppings �
Best breakfast ever!! I had the maple bacon bliss and it was definitely pure bliss! The fresh squeezed orange juice was also heavenly.
They have hands down the best waffles in town. There's
something about that batter - pure magic! I got the chicken and
waffles. The waffle was fresh, the chicken perfectly fried and
piping hot, the gravy was light and refreshing. The maple syrup
tasted very authentic. My wife got the CYO Scrambled Eggs with
Caramelized Onions, Avocado and Jalapeños. She loved it too. The
potatoes on the side were crisp and delicious. Add to this the
friendly staff - our host was great, kind and courteous! Parking can
be difficult but the place is well worth it!
Great waffles and very friendly staff. 9yo wanted to give the kids European waffle 4 million stars out of 10. Foster the Waffle & Maple Bacon Bliss were appropriately sized, actually glad they were not larger. Coffee could be better, but let’s be honest, you come here for the waffles. Also, 3 engine freight train comes right down the street. Would visit again.

Hands down the best waffles i have ever had in my life! If I lived in ft Collins I would probably be here every day!

I had "Foster the Waffle," which was a waffle with caramelized bananas, caramel sauce, and whipped cream, with a fruit bowl. The waffle was delicious, although a little bit too sweet for my taste, and I'm a sweet tooth. The staff was very friendly and helped me choose something from the menu. This is a great breakfast spot, and they have lots of interesting waffles to choose from.
