This place is a local treasure. Locally owned in a location that used to be a complete eyesore. Now a fantastic place to come and share an excellent meal. So much fun and unlike anything the valley has offered before.

Went in for lunch after Bouilla's change to sandwiches only. I was extremely impressed. The staff was friendly and polite. I enjoyed the atmosphere. The food was out of this world. I cannot stress enough that the sandwich I had was the BEST sandwich I have EVER had. The chef is incredibly skilled and elevated every aspect of the food. The bread was homemade and not thick or greasy at all (many restos in Hamilton seem to suffer from greasy sandwich syndrome). I ordered the tuna sandwich, and the ingredients were fresh and flavorful. The tuna was made with a fantastic relish and mayo and had flavor profiles I could not have even IMAGINED for a tuna sandwich; almost lemony, fresh, and clean. And fresh spinach! It was amazing. Everything on the plate was fantastic, including the carrot 'garnish', which was fresh and crunchy but lightly pickled in some kind of homemade brine. I'm coming back as soon as I can to try another dish here. These guys are serious about their food.

My best friend took me to lunch for my birthday. It was to die for. Fresh, tasty...service was excellent. Definitely will be back.

Okay, I'm still stuffed four hours after our fabulous lunch at Bouilla. We either eat there or my other half drives over for take-out. The staff is so sharp they even know what we usually order, but today we changed it up a bit. Luckily we shared the fabulous Chicken Parmesan Sandwich, 1/2 Ceasar Salad, the best Sweet Potato Fries on the Planet, my favorite Ginger Herb Soda and the grand finale was the fantastic orange strawberry Rhubarb Crisp with Vanilla Ice Cream we were sharing but having a round of dueling spoons because it was melt-in-your-mouth delicious! I cannot say enough about the Chef/Owner and his Culinary skills with layering flavors and textures in his creations. With every bite you experience yet another savory taste that delights the palate. We keep showing up just as the last of the Apple Sorbet with Bacon has been eaten. I will get to try it one day soon. If you want quality food at a Restaurant of exceptional quality, get to Bouilla as fast as you can. But save some Sorbet for me! :)

Fantastic food and service. Went there for dinner last night (Monday 13, 2014) - amazing blackened catfish with beans and rice. Great New York steak with carmelized onions and light blue cheese topping and white cheddar scalloped (chunked!) potatoes. Chowder was lovely with a nice pairing of bacon and minced/chopped clams...carrots were a nice touch. Of course the Creme Brulé was amazing! Thank you! Now about that wine license....
