Featured as the first Inspired Dining Series event, a collection of dining experiences in conjunction with the Epicurean Charitable Foundation (ECF) to discuss food, mentorship and the future of Hospitality in Las Vegas, it was alongside Assistant Executive Chef and Food Safety Manager for the South Point Hotel & Casino Keith Norman that dinner was enjoyed at Silverado Steakhouse. This Old Vegas room toqued by Chef John Romine proving to be far better than many locals might have ever guessed.

Chosen for the first of these meals thanks to both Chef Norman’s contributions as a Mentor and South Point Director of Food Operations Michael Kennedy’s position as Chairman of the ECF Board, it was as a group of five including one local Mentee that the group was greeted by a pleasant hostess and led to a table towards the back of the room. The space which is decorated in hand painted murals and vintage photographs is elegant yet comfortable as patrons of all ages and demographics were seen smiling over plates of both innovative seasonal options and traditional Steakhouse fare.

Embracing the old way of doing things in terms of service, the Potatoes loaded and Salads tossed tableside, it was over the course of nearly two-and-a-half hours that Keith, a young mentee named Ben and three others shared stories and opinions about the current state of the industry and how Chef Norman got his start cooking in his Grandmother’s kitchen. He and four of his brothers are all Chefs and Keith himself a Marine Corps veteran who came straight to Las Vegas and landed a spot at Bally’s where “Chef Warner – that old-time Chef who gave me my first shot, he took me through the paces from Graveyard to Swing shift to Days.”

Enjoying three styles of warm bread from Great Buns Bakery and a glass of house Wine with appetizers, the underage mentee abstaining and keeping a good distance from the glass throughout the night, it was over an amuse composed of both King and Blue Crab with only a bit of filler that stories about Keith’s time opening The Mirage were remembered. “A great ‘wow’ moment working with Mr. Wynn and Certified Master Chef Gustav Mauler” was cited as an inspiration to do things the right way; the same way Silverado cooks their tender Mushrooms in Burgundy Wine with Garlic and composes the Caesar Salad topped in Dressing with a bold smack of Worcestershire Sauce and Anchovy Paste.

Making almost everything possible on-site for nearly ten years since moving from Suncoast to South Point, Chef Norman stating “I’m not a mover and a shaker, if I’m with a good company I’m gonna stay.” It was while further discussing his time at the Mirage and then Treasure Island that he first suggested passion as the most important thing a youth can bring with them to the industry, “because if you aren’t passionate you’re just spinning your wheels,” a memorable bit of truth recalled between bites of Barbeque Prime Rib ‘Tacos’ served on crispy Won Ton Shells.

Enjoying dinner during Las Vegas Restaurant Week, the Chicken Vesuvio cooked in sweet Wine with Artichoke Hearts and Mushrooms is a crowd pleaser befitting a Casino described as having “a local feel.” It was here that Chef Keith spent some time discussing how a background of discipline benefitted him and contributed to his worldview and his reasons for working with the Epicurean Charitable Foundation. “Right after I graduated from boot camp, I was out on my own, right out in the world so I had to grow up quick. One of my first bosses in the Marine Corps was just that kind of guy – took me under his wing and taught me the things I needed to learn. Those are the kind of things I try to give back.”

Noteworthy for setting a high standard in Allergy awareness, every restaurant on the South Point property deemed allergen friendly and recently winning “a national award for the best Allergy Program through a company called Allertrain.” The South Point’s Food Safety Manager went on to say that he became interested in such things while teaching students for nine years at the Art Institute. “So when ServSafe was mandatory, a lot of the properties who knew I taught food safety reached out to me.”

Thoroughly enjoying a clever plate called the “Filet Trio,” a trifecta of Steak Medallions served on toasted Bread beneath housemade Sauces, it was as the group carved up the 16oz Dry Aged Rib Eye that Keith went on to say, “I’ve never believed that Health Departments should have to make us do what we as Chefs should be doing anyway.” He followed up by saying, “We really have to raise the bar – protect the A.” His parting advice to Ben was to treat “every day as a learning experience and never forget that.”

Certainly not planning to skip Dessert after such a meal, though the lack of an on-site pastry kitchen does mean most items are imported from elsewhere save for the best-selling Beignets and Vodka-spiked Dark Chocolate Ice Cream served with seasonal Berries, it was with a smile that Ben stated “there is not an employee on the property who won’t mention how good Chef Keith’s attitude is or how passionate he is.” As dinner was finished with Coffee alongside Sticky Toffee Pudding and a Warm Apple Crumb Cake, the contended crowd departing on Chef Norman’s advice that “if you can maintain [a positive] attitude and make sure that everyone is better in your presence you’re going to go a long way.”

Great service and great food. I find it a nice place for special occasions. Cozy atmosphere, I love the booth seating. Friendly and helpful staff

Loved the food it's some of the best I've ever had in my life. I also have to say the service was outstanding. Now I did go for thanksgiving so it's possible they up everything but I was so impressed I've been telling everyone to go that I can. Very clean and I don't think their is smoking but they are on the Silverado street side for parking at the casino. I did see children as well.

We really enjoy dining here. We have dinner with a group of18 and dinner for just the two of us. Always great service and wonderful steaks.

Pleasant surprise. My wife and saw a movie at the hotel. We wanted to get dinner. There was a line for the coffee shop so we decided to try Silverado. The steaks were cooked as we ordered. They were tender and seasoned well. We will come back.

Great spot atmosphere could use a little updating or better effort at the wall art lol.... what a nice celebration we had for my wife's birthday. The staff really takes excellent care of you here, prompt, attentive, and engaging, remarkable I'll return just because they were so enjoyable!!!!!! The food was awesome. I had a bone in rib eye, and my wife had a butterfly filet mignon. My daughter had prime rib tacos, and the drinks were perfect!!!!! Appreciated. Njoy FolkZ 🤘🏼😁

We have been coming here for years now it’s always a great place to come and eat! It’s a nicer restaurant and priced above average but you’re going to get above average food and service so it’s well worth it! I almost always get a Filet and it’s one of thee best steaks I’ve had in the country! And I love a good steak! My wife loves the salads and asparagus! We HIGHLY recommend eating here!

The Silverado Steakhouse has to be the best deal in town for a real Steakhouse. Silverado has a traditional steakhouse atmosphere, and feels rich inside. Part of the reason this Steak house is a bargain compared to others is all Steak dinners come with a salad and choice of potatoe. Our server Matthew was spectacular, and made my birthday feel special. Matthew was able to answer some questions we had, and relieved our concerns of a shellfish allergy. I decided to go with a New York steak with cheese & onion mashed potatoe. My wife went with the Skirt Steak Argentina that was topped with a chimichuri sauce. Both meals were amazing. For Desert we tried the Oreo Cheesecake, and it did not disappoint. Definitely a place to take some friends and family for any occasion or celebration.

Was delicious. I highly recommend this restaurant inside the south point casino. The portions are enormous. If you leave here hungry, you are the problem. The filet is melt in your mouth amazing and the scallops were plump, sweet, and juicy. Excellent wine and cocktail menus for just the right experience. Upscale atmosphere is sure to impress and fits the theme of the resort perfectly. Matthew was the best server! He is super attentive and knows his job very well. I love that there is a tableside expeditor to help with drinks, bread, and food service. This was the perfect nightcap to my vacation. Cant wait til next time!

If you're staying at South Point hotel and casino, definitely try this steakhouse. The staff are very friendly and the food is delicious. My steak was spot on, the loaded baked potato and garden salad were delicious. I enjoyed the atmosphere, as it's very nice but comfortable. If you're staying at South Point, make sure to use the voucher for a free bottle of wine from the coupon booklet they provide to you. The wine wasn't my absolute favorite, but hey, it's free.

What an absolute HIDDEN GEM! Located inside locals favorite Southpoint. We went for the Christmas Eve dinner with family. My boyfriend got a 4 course meal, specially created for the holiday. Incredible. I had 3 separate filet mingon with different sauces. Atmosphere is high society/ opulence of old Vegas. Will absolutely be eating here again, ASAP. Service is impeccable, and the steaks melted in my mouth!

Great steak. I highly recommend the tomahawk (aged) ribeye steak, rib eye and some cocktails. First time to be here. Scallops with spinach is a must. And the desert -beignet is so good.

We had a great time! Service was good, food was great. An all around great restaurant. We ordered bottles of wine, appetizers, entres. Not once did I have to fill my own glass of wine, or have to ask for anything, it was simply there. Simple menus, make great restaurants, make great experiences! I looked for something to complain about but couldn't find anything. Here's some pictures of the food I ordered to review.

I ordered the bone-in rib eye, medium, with loaded baked potato and asparagus. There are obviously better ribe eyes out there, but for the price point, it is totally worth it. The meat was remarkably flavorful and tender. This steak was obviously cared for and treated properly in the kitchen. The Kitchen does its job well; it delivers delicious food on time. The service is exceptional - I saw each server quietly watching each table for course needs, water, drinks, etc., It is truly exceptional service, but not overwhelming at all. The atmosphere here is very "old-school" steakhouse, which I adore. Warm lights, small menu, quality food and service. Oh, and the creme brulee?? Shut up its soooooooo goooooood - one of the best I've ever eaten.

Took my parents out for their 46th wedding anniversary. We arrived to two very cold glasses of complimentary champagne. The steak and scallops special was one of the best meals of my life!

One of the best steak houses in Vegas. Food is excellent, service is great. The prices are very reasonable for a steak house of this quality. While the restaurant is right off the casino floor it is enclosed so it is quiet and smoke free. Parking is free. I try to eat there every time I stay at the South Point

Went here for our 25th wedding anniversary dinner celebration. Waiter Paul brought us 2 full glasses of champagne to start off our dinner. Paul and Rey were wonderful in taking care of our drink, entree and dessert order. They had a fabulous golden and red beet salad, that I ordered instead of the dinner salad. Very delicious!! We also enjoyed a chicken, & vegetables dinner along with steak and coconut shrimp. For dessert, beignets and a delightful lemon cake. Took home a few boxes from our generous sized entrees, desserts and bread selections. Enjoyed it for a few more meals the next day. Plenty of parking at this Southpoint hotel and casino, where this restaurant is located.

Had the lamb silverado for my entree and beignet for dessert. Both were fantastic. Staff was attentive and unobtrusive allowing conversation to flow freely but never ignoring us. Can't wait to head back next time I'm at the South Point

What a wonderful experience. If you're looking for the perfect steak dinner and you want to get off strip, this place is perfect. The only thing better than the meal was the service.
