Great Italian Restaurant with incredible service, food and ambiance. A bit hard to find on the second level of the resort. I recommend the spicy rigatoni and the lobster ravioli as mains and the layer cake as dessert. The complimentary bread was the best I ever had in the US. The wine selection is huge as well. We had a blast of an evening. Reservation one month before highly recommended.

This is one of the best Italian restaurants on the strip. The menu is diverse and all the pasta is homemade. There are plenty of extras in the service including cheese, meats, pickles cauliflower, fresh bread and dessert all included in dinner. Servings are plentiful and well prepared. The service is attentive and not rushed. Music is great and the place is buzzing. Decor is fresh, clean and the freshly arranged flowers are beautiful. We left stuffed with food and eager to go back!

Food was delicious! Everything was made fresh to order. We shared for 2 people the baked clams, Caesar salad, veal parmigiana, spicy rigatoni, and chocolate cake. Portions are great for sharing and all delicious! I will say it was a very expensive place to be, even for Vegas! We had the above plus 2 drinks and 2 glasses of wine each. With 20% gratuity it was just over $500! But, the place is iconic and glad we went! Would go again, but know what to expect!

Great music, outstanding service and food here. This is our new favorite restaurant in Las Vegas! Our service team made us feel welcome immediately. Recommendations were accepted and thoroughly enjoyed. Even the Caprese salad, which my husband wouldn't normally choose got rave reviews from him. But, we came for the signature dish... Veal Parmesan. It didn't disappoint. Can't wait to return! BTW, reservations are 2 - 3 months in advance. Well worth the effort and wait.

During my recent visit to Carbone, the dining experience was nothing short of exceptional, largely due to our server, Ramon. His professionalism and knowledge about the menu significantly enhanced our evening. Each dish recommended by Ramon, from the spicy salami to the exquisitely fresh mozzarella, was a delightful exploration of flavors. The crowning touch of the meal was the dessert, which was, in a word, perfection. I highly recommend Carbone for an unforgettable culinary experience, and suggest seeking Ramon's expertise for recommendations.

Came in with very high expectations and they lived up to them. The service was top tier and the best at any establishment I’ve been to. Big shout out to Troy. Made us feel very welcomed and was super attentive. The food was delicious. The spicy vodka rigatoni lived up to the hype and a must get. We got the meat balls and fettuccini as well and it was perfect. All the complimentary items are incredible as well. A must visit if you’re in Vegas.

Phenomenal Italian food and phenomenal service. One of the best Italian restaurants I have ever experienced in my life. Reservations are hard to get. Drake, Wayne Gretzky, and other celebrities have dined here. It was expensive but well worth it. You have to try it.

Italian restaurant at the Aria! Environment is very dimly lit. They give you complimentary aged parmesan cheese, bread, and pickled cauliflower. My favorites were the beef carpaccio appetizer and the spicy rigatoni. We came in a large party and the service was good! The lemon cheesecake here was excellent!

The moment we stepped into the dining area, it felt like we went back into time to the 50’s; from the music to the service, and to the decor. It was a good experience overall. We had a wonderful server who knew the menu perfectly. We had a table of 8, and there’s complimentary bread, parmigiano reggiano cheese, deli meat, and pickled cauliflower. For appetizers, we had caesar salad, caprese salad, fried calamari, oysters. Definitely get the caesar salad as they make the dressing in front of you. For entrees, we had the spicy rigatoni, pasta pomodoro, mushroom pasta, meatballs and porterhouse steak which was perfect for sharing. Id say the meatballs was the highlight. For dessert, we had the chocolate cake and lemon cheesecake which both wet utterly divine. The chocolate cake tasted like Ferraro rocher. And the cheesecake was perfectly tart and light. FYI, no children allowed under 6 years old.

I am always skeptical when a place is very hyped so I usually try to temper expectations, but they did NOT disappoint! Came here for my bday dinner and we got everything the internet told us to get, and it was amazing. It was Summer League out in Vegas so we did see some VIPs which is always fun, food was great, 100% lived up to the reputation, service was SO AMAZING, our waiter Brad, was so nice and friendly. This place exceeded our expectations and I’m so glad we were able to go!

So I was absolutely spoiled and got to try so many dishes! The chef even stopped by the table. Everything was made with my dietary restrictions and allergies in mind. The amount of food that came was insane, but I ate almost all of it. The booths are private and intimate. It’s dim lighting inside but you can see just enough. The service was amazing. Everyone was so friendly and attentive. Definitely a must try!!

Carbone is the Best restaurant in Las Vegas. When one thinks of a culinary masterpiece set amidst the vibrant tapestry of Las Vegas, Carbone at ARIA inevitably emerges as a luminary beacon. This restaurant doesn't just offer Italian-American cuisine; it elevates it to an art form. Walking through its doors, you're met with a nostalgic homage to mid-20th-century New York Italian eateries, a delightful paradox that juxtaposes classic charm against ARIA's modern luxury. The stars of the Carbone experience are numerous, but there are some undeniable standouts that deserve singular attention. Firstly, their Caesar salad is not just good; it's arguably the best in America. Prepared tableside with flair and finesse, each ingredient, from the crispest romaine to the anchovies and freshly grated cheese, harmonizes to create a symphony of taste and texture. Each bite is a reminder of why this classic dish has stood the test of time, and Carbone's rendition might just be the gold standard. As you delve deeper into their menu, the spicy rigatoni demands your attention. This dish is a masterclass in balance and boldness. The pasta, cooked to perfect al dente, is bathed in a rich, creamy tomato sauce that packs a kick, sending tingles of spice dancing on your palate. Each mouthful is a celebration, a crescendo of flavors that makes it clear why this dish has garnered a devout following. Yet, it would be remiss to overlook the veal Parmesan. A behemoth in size and taste, this dish is the epitome of Italian comfort food. The veal is succulent and tender, enveloped in a golden, crispy crust, smothered with just the right amount of cheese and tangy tomato sauce. It's a dish that conjures memories of old-world family feasts, and yet, Carbone manages to present it with a flair that feels quintessentially contemporary. The ambiance at Carbone further enhances the dining experience. With its retro black-and-white checkered floors, plush leather booths, and vintage photos adorning the walls, the atmosphere is both intimate and grandiose. It's easy to lose track of time, swept up in the magic of the moment, surrounded by the mellifluous notes of conversation and clinking glasses. In conclusion, Carbone at ARIA isn't just a meal; it's an experience, a journey through time and taste. For those in search of dishes that resonate with soulful authenticity while being presented with modern panache, this is a gastronomic destination that simply cannot be missed. Every dish tells a story, and with offerings like the Caesar salad, spicy rigatoni, and veal Parmesan, those stories are nothing short of legendary.
