Our favorite bbq in New Braunfels! #coopers
Great BBQ! I don’t know what it is about Coopers BBQ but the meat doesn’t have that over smoked, over charred flavor. I get indigestion when eating smoked bbq at other establishments in New Braunfels but for some reason I have never had that issue at Coopers.
For that reason, the brisket with burnt ends are my favorite request!
Really good BBQ sold by the pound. The brisket was tender and juicy, with just the right amount of fat. Sausage was delicious. I like the cole slaw and LOVE the potato salad. Sauce, beans, jalapeños, pickles, onion, and bread are all serve-yourself and complimentary. Overall, a winner.
It's a bit expensive, but then again all BBQ is expensive. It's worth the cost for a good meal. I always stop @ Cooper's after we float the river
Good brisket and beed rib. Potatoe salad was peppery and like cold loaded mashed potatoes but I liked it. The sauce was watery and not tasty. The complimentary beans were great. The spice apples were good. Overall: Good.
Brisket Check List -. Is ingrained in every BBQ Snob and central Texas resident. Numerous restaurants and prolific publications, not to mention back yard smoking experts, have made us all BBQ geniuses.
I visited this eatery (again) last week. Here is the results-
1. perfect smoke ring with beautiful color - check
2. crisp, dark flavor-able bark - check
3. moist (not dry) tender meat with a nice hint of smoke - check
Beans, pickles & onions are included, all you can eat. Loaves of sliced bread are randomly placed for convenience. No service, other than the meat and register people.
If you are paying $12.95 lb for BBQ brisket, it better be good. This is good. In the past, I thought this eatery was expensive. A visit to Blanco BBQ last week solved that little concern.
Cooper's, here or elsewhere, is one of the holy grail of BBQ joints. Try it and you will know why!
Good tasty barbecue; reasonable price; very good sides; pristine facility; great management and waitstaff; A lot of people get extremely critical about Texas barbecue... Tough crowds indeed. Day in and day out, Coopers serves very good traditional Texas barbecue. The critics?? they probably don't know the difference between smoking with post oak or green mesquite. Anyway, this is a great, traditional Texas barbecue joint that is worth driving for a couple of hours to enjoy the experience. Me, I've smoked over 1000 briskets and won a few competitions.... Hey, Coopers is serving up some outstanding barbecue! Trust me on this... Enjoy!

I am a BBQ snob. It takes a lot to impress me. I don't need your sides or sausage. I want sliced brisket, lean. With bread and onions. This brisket was perfection, I hope it wasn't a fluke cuz I'm going back. I HATED the sauce to much vinegar for Texas. But the brisket was heaven y'all.
Good Bar B Q--This is self service--meaning you. Cooper’s Old Time Pit Bar B Q has been around for quite some time however not in New Braunfels. This location is on a by pass around New Braunsfel Hgy 337. They also have internet ordering on their web site. We entered the restaurant and the first thing to do is pick out your meat or meats where then will take and weigh for the total price. Up can add sides at the counter where you are getting the meats weighted. However today they had a special which was advertised as pork chop and baked potato for $10.99. I noticed pieces of pork lying on the grill. They appeared to have been cut from a pork loin and were boneless. I ordered the special and what was I served, a piece of the boneless loin and not a true pork chop. The piece was about 1 1⁄2 to 2 inches think and dipped in their sauce. The piece was very good as was the baked potatoes. Others in the party had the “pork chop” as well and beef brisket and ribs. As long as this place has been in business I know they know the difference between a boneless piece of pork loin and a true pork chop. They can call it what they want however a true pork chop is not a piece of boneless pork loin. In spite of their confusion the meat was good. I know someone will now comment that it is me that is incorrect and that the cut was from a loin that had been boned. Give me a break friend as I was a butcher and cut and sold meat for years. You can pick up trimmings and bread at the bar. Trimmings include a bowl of beans however I was the only one in the party who opted for the bowl of beans. Onions and pickles are also on the condiment counter. By the way, those beans were included at no additional cost. There are loaves of bread scattered around and if you desire some bread help yourself. You eat at picnic type tables either indoors or outdoors depending upon the weather. You dispense your own drinks. AND you clean your table and toss your own trash. There are no waiters to assist you. So the bottom line is that you pay full price and you do part of the work to get your food. Kind of like checking yourself out at the grocery store and bagging your own groceries.
Was here with wounded warrior project and the food was good. But I like best were their pickled jalapenos, the best I've had, my wife bought me a huge jar to take back to Colorado. Great experience
Q Loan Required. No long dissertation or comparison for this review. You can find that in a number of places such as the Texas Monthly that will give you a review of the top bbq locations in Texas. The long and the short of it is, this place has good bull neck (my old uncle's term for meat). If you can't find a slice of brisket, a meaty beef rib, a smoked pork chop, or a sausage link that you like here, please do not pass Go, do not collect $200, but do go back to New York City where you must be from.
The only issue I have, and it is not peculiar just to this place, is that a bbq meal, many times served on butcher paper, or paper or plastic plates and with plastic utensils, in a cavernous barn or a little old shack ought not to cost $20 dollars a person. Yet with meats prices at $12 or more a lb. the bill for two at places like these is $30 to $40. I know someone is going to say, "then go to Bill Miller's if you don't like the price". That's an option, thank you, but with this mentality, how would you like to pay $50 or $60 a couple for your bbq meal . . . a distinct possibility when people vote with their wallets to continue an inflationary pattern. Think about it. If you won't pay an inflated price, vendors cannot sell their product and will not continue the inflationary practice.
Just some food for thought . . .
My favorite BBQ in New Braunfels. I go to Cooper's about once a week. My favorite item on the menu is the half chicken ... excellent, peppery rub and smoked to perfection. Pork chops are also winners. The baked potatoes are delicious ... nicely coated on the outside with seasonings. They have my favorite sweet tea in the entire state! Beans are excellent and sauce is flavorful. While I also enjoy other local BBQ joints such as Granzin's and Rudy's, Cooper's is clearly a notch above.
AWSOME. I lov this place true family atmosphere great food reasonable prices!! Come early they run out soon!! 7 out of 10!
In all of my food travels, I found Cooper's to be one of the best barbecue pits in all of Texas! I highly recommend it to others.
Yes, the do BBQ. Their sides are not great, but their BBQ is for sure. Be careful as they pick up whole pieces make sure you are getting meat and not fat, the fat does not taste as good as the meat. Ask questions as well, the do BBQ very well, but there often in confusion on how to navigate the line.

It was O.K.. This is a place that tries to do too much. They provide 13 meats and then also have a retail business selling dipping sauce, rub, etc. Pricing is strange. Consequently they don't focus on any particular cut of meat and shows in the texture and flavor of the meat they serve. You have to pick out what you want first and then proceed to the register to find out what it will cost after they are weighed as most items are by the pound. This can led to an embarrassing surprise if you are ordering when you are very hungry. I thought the sausage was nice and spicy but everything else was just O.K. Friend brought me here from Austin to just show me the place. This is not the little hole in the wall place that I prefer but somewhat of a factory production set up. Not a place that I will return to anytime soon.
From Wisconsin. You can't get good BBQ in Wisconsin. I passed thru TX and met my buddy Silent Walker who lives in NB and he says Coopers is the best.
When it came to brisket, he was right. We picked our meat right off the grill. The steak was too rare and tough for me. The ribs were just ok as well as the beans.
The service was excellent and I would stop there again.
Just OK. For years we have heard about Cooper's in LLano....I hope it is better than this place! Just run of the meal que, complete with fatty pieces of brisket served. Go to Salt Lick if you want some Bar B Que that is over the top.
Best BBQ ever!. Ate at Cooper's last night and I have to say this is my new favorite BBQ joint. The beef ribs were huge and juicy, spiced to perfection, and just fell off the bone. We got sauce on the side but the meat here is so good (really it is!), I didn't even need (or want) the sauce. The brisket and sausage were amazing as well.
A lot of BBQ joints do one or two sides really well (creamed corn at Rudy's comes to mind) but I have to say that all the sides were perfect, and the beans (which I usually don't like at BBQ places) were off the charts with flavor and better yet - all you care to eat.
Do your taste buds a favor and the next time you're driving I-35 through New Braunfels, TX (or are anywhere close like Austin or San Antonio) stop into Cooper's for some unforgettable BBQ.
Good BBQ. GREAT beans. Very relaxed atmosphere. BBQ can ce rather expensive but this place is probably about the most expensive I've had. If you don't mind paying a lot...it will be good.
Get the pork tenderloin. It melts in your mouth. No need for the mediocre sauce. The meat stands on its own. The beer is ice cold and the beans have whole jalepenos cooked in them. Mmm hmmm.
Overpriced !!. Wayyyy to proud of their BBQ !! $$$
Omg... Love this place... Food is a little pricey but so delicious!!!!
Gruene Goodness. I love the original in Llano, but that's a bit far to drive from San Antonio on a regular basis. This one has the same great BBQ but with a much cleaner and upscale atmosphere PLUS plenty of parking! This rates way up there for my favorite BBQ places. Try the BIg Chop with baked potato and cole slaw. Plenty of free jalepenos, pickles, onions, and sauce at the table. I go often.
GO for the smell alone!. Walked in and smelled the hickory.....all of the meats on the pits were mouth-watering and made me want them all. I like the way you get a tray and get what you want then find a place to sit, kinda like a company picnic. Too full for sweets, but they looked delish. Maybe next time around ;)
Birds of a Feather. I can only trust that this location is more of the same from the good folks in Mason. While I have yet to stop by the NB pit, Im sure it's as good as the Junction and Mason locations. You can argue best barbecue till the brisket comes home, but everyone has their favorites (Lum's, Junction) =] Cooper's is definitely top tier.
Love the place.... Love the sirloin and the beans. I have tried the brisket and it was Ok as was the sausage. The cobbler is good to.

I thought the food was good but was COLD by the time I sat down to eat!!
Been to the original in Llano, Texas, and this has the same great food you only find around Central and Hill Country of Texas. You walk by the pit and pick exactly the pieces of meat you want. Only problem is it all looks so good we always order way too much!! Good part, great leftovers!!!
NB Locale. Food is good. I am hooked on the baked potatoes. Prices are kinf of high.
Delicious BBQ, the best in new braunfels!
BBQ is partially in the sauce partly in the meat. If it's the sauce you like it comes in two forms, brown sugar base or vinegar. Cooper'a meat is great but I am a brown sugar sauce man. If I took Granzin's sauce to Cooper's it would be the best of both worlds. Fortunately I can just eat at Granzin's and get both for a significantly reduced price. The fixins include pinto beans and the folks are friendly.
By far the best of the Cooper's chain, this location is relatively new, and just as pristine as the new Ft. Worth location. Ordering is done right at the new stainless steel pits just inside the doors, and the display of meats is impressive.
As Texas BBQ goes Coopers stands out in a crowded field. BBQ places are all over the place. I tried a little bit of several things. I had a little brisket, very good, a beef rib, really good, and some jalapeño sausage which was great. I enjoyed the coleslaw but the standout among the sides was the jalapeño bacon 🥓macaroni. The beans were really good to. On a previous visit I tried the peach cobbler and it was quite tasty. Mr bro bro also tried the turkey and he said it was really tender and juicy. I took some home to the wife and it she loved it.
Delicious ribs and corn, never fails. This time we also went for the prime ribs and was not disappointed. You can't go wrong with Cooper's
Coopers is my favorite BBQ anywhere. Stopped by on the way home for some to take back with us. Prime rib. Brisket. Turkey and of course their amazing pork chops. Ought to last us most of the week. Plus some bottles of Cooper seasoning that we use on EVERYTHING instead of salt and pepper.
I'm not a meat eater so a review from me seems like what a waste of time but I do have meat eater friends and one is my husband. They had the rib eye, baby back, and sausage. They loved the way the meat was cooked. Tasty and flavorful. They weren't impressed with the sauce. What I heard was on the vingar side. Still everyone enjoyed there meal including me and my baked potato with corn on the cob and beans. If you're in the are worth a stop.
Customer service is definitely out of this world. Cleanliness of the establishment both in the dining room and bathroom outstanding. Customer service was excellent in definitely again outstanding. A little on the pricey side but the price is definitely worth the food their food was out of this world. I would highly recommend if you're in new braunfel to stop by Coopers BBQ and enjoy yourself just some awesome BBQ.
I like this place. They seldom are out of food that we want and we can usually get beef ribs even late in the day. They have a large selection of side dishes that I appreciate because that is mostly what my kids want. Good dessert selection too. A little pricey but it's good food. They have a lot of seating but there are blocked off sections due to Covid.
