Cool ambiance, wonderful building art, and nice staff. Didn’t spend much time here but I would if I had it. Coffee was good—but I don’t care enough about coffee taste to have a very relevant opinion. I’d love to sit and work here though!

Really neat place in downtown Pueblo. The food, a bagel, was very good. The strawberry gratis (sp?) was nice. I had a pour over coffee. Bit weak for my taste but is was well prepared. The staff were great and the place was busy with locals. Always a good sign

Great start to our day. We stayed the night in Pueblo and chose Solar Roast for breakfast. Loved the mushroom quiche and chicken pesto croissant. Great cappuccino and chai. Really nice staff too.

Really appreciate the outdoor pickup window for safer beverage/food pickup. Their tofu scramble burrito rocks! Also, we got a home espresso maker for the holidays and heard the best results are from coffee that's roasted locally. Highly recommended all of their whole bean coffees for this. We've had some top notch cups of coffee!

I LOVE SOLAR ROAST! They are delicious, and I sincerely appreciate the methods of sustainable roasting and the excellent vegan inclusivity (though I wish they had more options). Supporting small businesses downtown feels great, but it is sad to see such inaccessible prices for this socioeconomic demographic. (Eating veg shouldn’t be expensive!) Solar roast is a successful company with business in most states in the US. They should be able to provide access to lower priced food options, or simply more vegan/veg friendly options in general. Try the Chilé lemonade, you won’t regret it. 😉

HIGHLY RECOMMEND! The cutest cafe that serves high quality coffee and has helpful/friendly employees. I always feel so happy when I come in here 🙂
