5 Star Food, 5 Star Service - friendly, cheerful, affable. Front of house was superb. Presentation was very beautiful. I was enamored with the diverse sake glasses. Counter seats were a lot of fun from which to watch all the action. They made my friend's birthday very special. Highly recommended. Can't wait to go again. Kudos to Chef Hiro and team!

Absolutely five stars. Very authentic dishes with fresh ingredients of the season. Everything is with a touch of innovative spicing and designs, while you can sense the dedication to the details (especially the broths) by the chief. I'm really surprised by the quality, and I'll surely come back every time I visit Seattle.

I had my first Kaiseiki dinner experience at Wa’z in Seattle. @wazseattle
Kaiseiki dinner is an elaborate, multicourse dinner originating in Japan. Often reflecting the seasons, the dinner features an array of delicately prepared dishes with seasonal ingredients.
It was an incredible experience, with each course carefully curated and featuring seasonal ingredients. The special new year's theme featured foods traditionally consumed during this time of year.
My dessert came with a board reading "Happy Birthday," and I was given a beautiful flower bouquet as well. It was the thoughtfulness that went into the dinner that made it truly special, and I'm grateful for the wonderful evening!

While omakase often gets the most mentions when it comes to higher-end Japanese dining in the US, kaiseki cannot be overlooked!
Wa’z was our first kaiseki dining experience so we have nothing else to compare it to, but it’s was an amazing experience nonetheless. The meal came out in multiple courses, and sitting at the counter allowed us to see the chefs meticulously prepare the dishes and also listen to the intricacies and details between each dish. Since we came in the fall, the menu was autumn-oriented, with many fall themed dishes and ingredients to complement the changing seasons. My favorite was definitely the A5 wagyu steak—literally melted in my mouth as I ate it!
Compared to omakase, the variety of food you are able to try is definitely a different experience, so if you are in the mood to try a diversity of different flavors, wa’z is a great option! Omakase definitely has its place for high quality seafood and ingredients when you are specifically searching for that, but if you want a change of pace kaiseki is a must try.

Both food and service were great. I especially liked
- they added Persimmon to the menu to balance the savory taste with sweetness. I wasn't a big fan of persimmons yet I enjoyed this innovation
- there were two Uni dishes with Hokkaido sourced Unis
- the cod tasted much better than expectation. Normally I expected cod to be on the bland side but they made it taste amazingly good.
one minor thing we did not like was that the wagyu they used was more "stringy" than we would like.

Went to Wa’z Seattle for our 5th wedding anniversary. They serve a 9 course menu containing authentic Japanese cuisine with some modern twists. Every guest is served at the same time which is a really neat concept.
The Food was uniquely presented and delicious. Service was impeccable. They even gave us flowers for our anniversary. This was the best dining experience I have ever had. We will be returning for future months menu.
Be aware its Japanese cuisine not Japanese-American cuisine. They require s reservation, we saw them turn 5 people away and focus on the current customers, explaining every single dish that they served. Amazing.

Everything was delicious! I’ve been to a lot of upscale Japanese fixe prix restaurants, and I think Wa’z really hits the mark. The Kaiseki menu (changes monthly) features a variety of dishes, which really helps keep things interesting from dish to dish. And what’s better — everyone in our party left full!!!
Looking forward to coming back here next time I can grab a reservation!

We loved dining here. You’ll be seated in a room with about 5-6 other parties and you can see the chefs prepare everything for you. The hostess is so kind and it was great to be able to speak Japanese with her. We ordered a sake pairing and just to give a heads up you will get a lot of different sakes to try. But each sake paired well and brought out a lot of different flavors for each dish. The fish was fresh and the pairings of everything blended well together. They even give out a bouquet of flowers if you go for a special occasion!

This was a beautiful experience I am very grateful I was able to experience in Seattle. The artistry and skill that goes into the presentation of the meal is exceptional. Truly every detail is thought about to highlight the ingredients used. Wa’z is far more than a single meal, as an expression of the pure joy food can be.

A little bit of Kyoto here in our backyard! My husband and I were so happy to find this gem. We've had kaiseki before in Kyoto and Wa'z does not disappoint. The ambience is minimalistic which allows you to really focus on the food. I highly recommend doing the chef's counter for the best experience. It was fantastic to see Chef Hiro and his team meticulously make each dish -- like a beautifully choreographed performance. I enjoyed learning about the cultural significance of each of the dishes. Each is carefully curated and brings out the essence of the traditional ingredients. We will definitely be back to try his next menu!

The menu is well thought through, combining the traditional Japanese cuisine with modern approaches. You get a proper Kaiseki experience at Wa'z, but you pay as for a decent Omakase. Getting rid of some posh elements (black caviar with a piece of golden foil and a slice of truffle???) would make the experience feel more authentic and honest. I liked the dining experience at Wa'z, but it feels to me somewhat artificially and unnecessary overpriced.

Had my birthday celebration here, a fantastic experience. Since it is just past spring festival, all February featuring spring fresh ingredients that contains unagi, soybeans, maitake and greens.
My favorite part is 八寸 that contains seasonal ingredients and lots of contrasting flavors. 炊き合わせ includes duck breast, eggplant Tokyo green onion and rich in flavor and tastes very spring.
The main dishes 强肴include Miyazaki A5 Wagyu steaks (three pieces, rare with beets soy sauce) and six pieces nigiri including Uni from Hokkaido and Otoro. The sad part is Uni is still not as fresh as what I had in Tokyo.
Desserts are very special, featured soybean flavored penna cotta with berries and Genmai tea ice cream, so far the best Tea icecream I had. Since it's birthday chef made special birthday decorations.
I wished there are more picked veggies though. But it has been a great experience.

Seasonal menu, changes monthly. Kaiseki style menu. I went for the counter experience as that's the best way to enjoy the Japanese cuisine :)
The course has a set of around 8 tapas style dishes. I thought the appetisers were a bit on the weaker side, however it got much better as the night went on. Most memorable dishes were the - suinomo (soup), shinogo (sushi), takiawase (braised dish) and the gohan (rice dish).
Some reviews said it wasn't enough food. However I thought it was plenty, I was really full afterwards and there was a nice variety and balance. Each dish was light and delicate, just the way I like it! I accompanied the menu with a sake flight since sake pairing wasn't available.
Great experience, food looked nice and tasted delicious. Good variety. If you're looking for a more sashimi, nigiri omakese I'd suggest going to shiros or kashiba. Waz definitely shines for it's hot dishes. There is a sashimi dish but I only found that to be average.
Everyone was very friendly, the waiters are not as knowledgable compared to kashiba. However the chef is there and is very happy and willing to answer your questions.
Overall great experience, a solid 4 star. Welcome to Seattle :) I'm really excited to see what you have installed for next months menu :)

We were lucky to get a table the night before. Arrived 5-10 mins earlier when no one was there. We were greeted right away and seated after temperature check. Due to covid, they only have 7 tables and each have one table in between so it felt distant enough. All employees were wearing masks at all time.
It was our first time, so wasn’t sure what to expect except that it’s a multi-course dinner. Every course was served to all tables altogether, so that everyone is sort of on the same pace and no spoiler for anyone. Like any of the fine dinning restaurants, we felt the warm hospitality and every course was introduced as it was served on the table. The food is definitely delicate and delicious. In the end, they prepared special decoration for the dessert and flowers with a card since we mentioned in the reservation. The whole experience made us felt really welcomed and cared. We were really glad that we came here, and will definitely visit again on another special occasion.

We went to Wa’z Friday night for their soft opening and had one of the best Japanese meals we have ever had. Kaiseki is as much about the presentation of the food as it is about the food you are eating. In this case, both were wonderful. Each course had its’ own theme and style, and was a visual feast as well as a celebration of flavor and presentation.
The rice was perfect, you could taste and feel each grain, the ikura had tender outside skins and a great “ocean” flavor, the sturgeon was fresh from the sea while the A5 wagyu beef MELTED IN YOUR MOUTH.
One of our favorites was the appetizer, a fantastic combination lotus root, blueberry, tofu, sesame paste with a sprinkling of beets. Other hits were the A5 wagyu beef (the best I have ever had), the glazed fried rice balls and the sturgeon Karaage. Every course was a hit.
This is not your father’s sushi! No rolls here but a pre-set menu, made with the best ingredients, beautifully prepared and presented and happily served in front of you

I recently visited Wa'z. This restaurant is not only about great food but about food as performance art. We sat at the counter and Chef Hiro Tawara and his staff prepared the most beautiful food. Each course was done with precision and beauty from beginning to end. I highly recommend this wonderful new restaurant! I'm looking forward to visiting each month to experience his new ideas in the art of Kaiseki dining. If you love food and dining experiences this restaurant is not to be missed!

Truly authentic Japanese multicourse dinner with original twist by chef Hiro. The menu changes each month with the seasonal theme. March included an incredible set of dishes. From the renkon blueberry golden beet tofu and sesame paste opening dish through all nine courses it was amazing.
