8.10.2023 Cool spot. Popped in just before 3pm, which is when they close I think. Bigger on the inside than it looks from the outside. Plenty of parking at that hour and just one customer was in this sitting area. More space and seats than many of the Starbucks I've been in. Quick service at the front, the coffee came out quick. Standard menu, cool roasting and sitting area and good coffee. Worth the stop.
First and foremost. The coffee is fantastic. Secondly, the food is delicious. Honestly, my only complaint is I wish they had more of the sofa-like chairs. We instantly took the two they had. The music was very low-fi, and the whole situation made my blood pressure lower by twenty points. We will come back, and it's an enormous pleasure to support local businesses.

Parking is a nightmare, especially on weekends. Very Very limited parking.
Interior is unique-clean-and comfortable. Again-limited-limited seating.
Coffee selection is good-I tried two different coffees-a medium and a medium dark. Neither were strong and their taste was subtle.
I’d definitely go again.
UPDATE: I am starting to get great shots out of the bean now. It seems like the problem was the opposite, the bean was too fresh. Likely that's why it was pulling really inconsistent shots in the beginning as there was too much gas. After over 10 days, things are starting to look great. I have updated the review. But, I would still encourage the company to put roast date on their bag so that people can rest their coffee accordingly.
Long story short, roaster was right about the freshness of their beans, I was wrong.

Really really unhappy. I bought a bag of 'freshly roasted' coffee from their shelf, with no roast date on it. I asked the sells person twice how fresh are these beans. They assured me they always roast beans in their shop and its at most 4 days old. I bought the bag home and immediately could tell the bag is not fresh as the shot was too fast even with really fine grind settings. I know what I am talking about because, I have bought hundreds of freshly roasted coffee online from different third wave roasters and I can immediately tell the freshness of the beans from the shots I pull from them. I sent a refund request to their email which nobody bothered to reply.
I took the bag to their shop and a salesperson told me they don't refund and they roast everyday. They brought the owner and the owner was doubling down on their claim that they always roast freshly. I appreciate her patience as she took time and pulled shots from the bean, and gave me two espresso shots to drink. But, even though she saw the shot was pulling fast, she blamed it on the grinder. I came back and thought maybe I was really on the wrong. But, after trying multiple finer grind settings, it's absolutely clear the bag was stale.
I am not saying they don't roast fresh, because they do it for sure. But, that particular bag was old. Maybe they forgot to take that one off the shelf, who knows. A company with good customer service would have refunded the moment they saw the shot was indeed pulling fast even in their machine, but they didn't do that, instead doubled down on their claim.
Giving four stars for the food because the coffee I had in their shop was tasty. But, I will definitely not return to their shop. This is a lesson to myself to never buy a bag of beans with no roast date on it. That was the first red flag and I should have listened to my instincts.
Really great vibe, product, and service. A roastery that invites you to enjoy their coffee and hang out. Lots of coffee origins and methods of extraction (espresso, pour over, aeropress, and French Press). And they're very willing to talk coffee to the inquisitive customer. Really enjoyable experience.
Cervantes has delicious coffee! I have gotten their seasonal drinks a couple of times and they’ve been really good each time. I got the Mexican Mocha this time, and it’s amazing!!! They also sell coffee beans. The parking lot is a little small, as is the inside of the coffee shop. Definitely will be going back!
The quality of the coffee was pretty nice, the space is kind of odd as its in an industrial park kind of in the middle of no where. Parking is horrible as well. My honest take? I liked it, but 6$ for a small latte that only comes in one size is way overpriced so there is no value there. It is not a place that I would go out of my way to try another cup. However, I would 100% buy a pound of coffee from this place, they do a good job.
I'm a huge fan of cold brew, I order it everywhere I go. I see exactly why Cervantes is so proud of their cold brew, it really is amazing. I usually try to stock up on some of their famous blend whenever I come here. Their coffee selection is great as well and they have a seasonally rotating menu of options on top of the regular offerings.
The biggest issue with this place is the parking. There have been plenty of times where the parking lot is full, and being located in a business park, finding parking can be really difficult.
Very nice seating area, comfortable chairs, right in front of where they roast the beans! They also have an upstairs seating area with a cozy feel. I had a cortado and a chocolate croissant, coffee had good stong taste. They sell their roasted coffee in bags too.
This was a great little coffee shop. Went here early on a Saturday for coffee. Not a huge selection of breakfast items but what we did get, was good. They have many different flavors of coffee for you to choose from. Parking is limited but that is to be expected. The nitro cold brew was pretty good if you are into that type of thing. Would recommend.
Well worth the detour! Such good coffee and really aware of international problems surrounding the industry. Wish I lived in the area so I could take advantage of the classes they offer. Also really dig the fact that they still ask customers to wear masks. Vaccination does not equal complete immunity folks!
A hidden gem! The coffee, pastries and service was amazing. Definitely stop in if you're in the area, you might just find your new go-to coffee shop!
High quality, but a bit expensive coffee. The cold brew with orange syrup is insanely good! I had no idea that the combination works. My wife always insists we go when we're in the area.
I pass by this place all the time and finally decided to stop in. Very cool little coffee bar / roaster in the middle of an industrial area! They have a little library with kid books too! There's a slow drink bar for pour overs and French press orders, and their drip coffee is solid! Much better than the Starbucks down the road!
The coffee is very good, and that's what matters most.
I'm not sure I have any desire to stay though? I've only ever gotten to go from them, but they do have a fine seating area if you want to sit and have a chat in a coffee shop that isn't a Starbucks.
How have I missed this quaint coffee roaster all these years? I had a very smooth flat white and I will definitely be back. The atmosphere is quite chill & inviting. Plenty of parking and decent handicap access.
